Fried Mee Hoon With Stew Pork |
Serves : 3 to 4
Ingredients to be prepared in advance :
- 10 to 12 pieces of Chinese Mushrooms, wash and sock in water till soft, cut away the stems, slice the mushrooms, then marinate with 1/2 btsp of soy sauce and 1 tsp of sugar for 15 to 20mins.
- soak the dried mee hoon till almost soft, or a rinse with hot water, drained, make sure the mee hoon is not too soft or else it will break easily during stir frying.

Other Ingredients :
- 200g dried mee hoon ( Rice Vermicelli )
- 1 to 1/2 tbsp Lee Kum Kee Premium Light Soy Sauce or adjust to taste
- some pepper
- 3 eggs, beaten and add a few drops of soy sauce
- some veg of your choice ( Chinese cabbage, Xiao Ba Cai, Chye Sim.....etc ), if it is Chinese cabbage, cut stripe of about 1 cm width
- 6 big cloves of garlic, chopped
- some cooking oil
- 1 red chili padi, slice into 2 and deseed ( optional )
- a small can of Narcissus Stew Pork 125g
( you may add some mushrooms if you want to, if you are using the Chinese Dried Mushrooms "Xiang Gu", soak the mushrooms till soft and slice them, add them during the saute of the garlic )

Method :
- prepare the mushroom in advance ( see above ).
- beat the eggs with few drops of soy sauce, fried with little oil and mash a little into many small pieces, put aside.
- in a wok or pan, add little oil enough to saute the garlic.
- add the marinated mushrooms, stir fry for a while
- add chili padi and veg.
- add mee hoon, then pour the whole can of Narcissus stew pork including all the gravy ( shake the can first before opening the can, use a fork to poke on the pork so that the pork will break into smaller stripes. )
- add 1 1/2 tbsp of soy sauce, dash of pepper and stir fry, make sure the mee hoon is evently coated with the sauce.
- add fried eggs, stir a little and serve.
*( Note : do not stir fried the mee hoon for too long or too harsh as the mee hoon will break easily )
