Nyonya Dessert : White wheat ginkgo nuts ( Bubur Gandum Putih )

White wheat ginkgo nuts dessert
White wheat ginkgo nuts dessert ( in Malay, bubur gandum putih )

This dessert reminds me of the root of whom i am, a Peranakan ( Chinese born descendant but with the influence of Malay culture ) . Yes my grandma was a Nyonya ( female of Peranakan ). I miss Nyonya desserts and the kuih-kuih ( snacks in Malay ). In this recipe, i use good quality of Gula Malacca, and fresh Santan ( coconut milk ) instead of the packet coconut milk.  It is very important to use the fresh coconut milk, not only it gives you a smooth texture and yummy taste it also gives you a memorable "after taste" which makes you crave for more, hahah!

Butter Cake

Since young, other than cupcakes, butter cake is one of my all time favorite! I prefer to bake my own butter cake because i do not sting on the butter! Most butter cakes you can buy out there either do not have much of the butter taste or they are rather "dried" not moist enough!

So, try my butter cake, easy to make and yummy!

Back from vacation!

Hi everyone! How are you guys doing?
Sorry for taking a long break, i was on vacation with my family, spending wonderful time with them and hunting for good food to eat in Penang! : )

Penang is my all time favorite place for relaxing and good food! Although the traffic there is heavy, it never stops me and my family to hunt for our favorite food. This time round, i would like to share with you at my Chat Room about the nice food i feel worth trying and value for money. So please go to my chat room to find out more!

After my vacation in Penang, i took a break to rest both of my hands. As some of you may know that recently i had gone through two rounds of surgeries on my right wrist to repair my torn ligament, my left hand now has some problem due to the tendon is "over used", because i only left one hand to do my task as i can't use my right hand due to the surgeries. Therefore now i feel the pain on my left hand........ Had a steroid injection on my left hand two weeks ago, hope the pain subsides soon, Amen!! I can't cook and bake for the time being, but i promise to come back to share some new recipes ASAP once both of my hands are better. Pray for me!

Till then, hope you guys continue to cook and bake! Enjoy!

Hainanese Chicken Rice

Hainanese Chicken Rice
Hainanese Chicken Rice

Hi, today i would like to share with you the Asia well known dish, especially in Singapore, Malaysia and Hong Kong. What i like about this dish is, you do not waste any of the ingredients, you savage them for another dish. For example, the fragrant rice cooked with the broth from the chicken you pouched, and that's not all, the broth can be used it to serve along the chicken and the rice, and the chili sauce also added with the broth, wonderful! The aroma of the chicken with simple ingredients of sesame oil and soy sauce, the fragrant rice and the nutritious broth from the chicken, with the  garlic chili sauce for dipping, all blended well with one another!

I am not really sure the history of the Hainanese Chicken Rice, is it from China or Malaysia? But after some research this is what i learn .........

As you may know, the word "Hainanese" is from "Hainan", a province of the southern of China. Needn't for me to explain, that the province is a village of  Hainan dialet residents. It is believed that it was the immigrants from this province that came to other parts of Asia such as Singapore, Hong Kong and Malaysia and they were the ones introduced this dish decades ago. It is also believed that the original recipe for this dish was slightly different, whereby the original recipe they used pork to add to the broth, but in the modern day we do not add pork anymore. Also, the original version of the rice was moulded into balls, just like where you can still find in Malacca today, and the original recipe was without the butter.

The ingredients for this dish are the normal simple ingredients, it is amazing that simple ingredients can produce such an aromatic dish that most people love! In this recipe, i am providing two method of cooking, one is using the normal cooking pot and the other one is using the Pressure Cooker.

So, don't hesitate to try this recipe! Enjoy your chicken rice!

Creamy Pumpkin Soup

creamy pumpkin soup
Creamy Pumpkin Soup

Many times when i dine out, i always unsatisfied with a few types of soup, especially the pumpkin soup.......mainly because majority of them either serve you the soup from the can, or from the ready made pumpkin powder, or the texture of the soup is rather dilute! So i told myself why not i make my own pumpkin soup? Well, i did!

I have tried couples of time, adjusting the ingredients, improvised it to make it taste better. I have settled down the ingredients for better taste, but still not satisfied.......something is not right...........yes, it's the texture and the consistency of the soup! Despite i have tried to add more cream it was still the same!

Then until one day i asked myself, will it make any different if i use different type of pumpkin? Before, i was using either the local pumpkin or China pumpkin. So i decided to give it a try!!

Finally, i tried on Butternut Pumpkin. Guess what? It Works!!!! Bingo!
I don't know about you, different people has different liking of the consistency, but this recipe works for me, and my conclusion is......different types of pumpkins really make the different in term of the consistency!

As there are many types of pumpkins, some are good for steaming, stir frying, making desserts, finger food and soup, in time to come i won't hesitate to try the varieties of the pumpkins! I shall share them at my blog, so do come back for the update!

Kong Pao Tien Ji ( Kong Pao Frog )

Kong Pao Tien Ji ( Kong Pao Frog )

Yes you heard it right! This is an expensive and sumptuous dish you can find it at the restaurants and some "chu-char stall" !

Tien Ji as in Mandarin, Tim Kai as in Cantonese, means "frog". This is a Chinese delicacy and most people love it! Most of Chinese would have this dish on special occasions. Even in the movie "Shanghai Knights" by Jacky Chan, one of the actors Owen Wilson mentioned about "Kong Pao Chicken" during the cut where he was having intimacy with Fann Wong!

If you ask me why it is called "chicken" instead of "frog", well......i do not know, haha! Maybe it looks like small version of chicken? If any of you know the answer, please let me know, thanks!

* ( You may substitute the frog with chicken meat if you like. )

I hope you like my recipe for this dish, enjoy!

Finger Food - mini Prata ( Roti Canai ) Sausage Roll

Prata ( Roti Canai ) Sausage Roll
Mini Prata ( Roti Canai ) Sausage Roll

What if you do not have time to prepare the dough for party finger food? You want something easy to prepare, fast and simple. Here you are Prata ( Roti Canai ) Sausage Roll !

Usually i would prepare the dough from scratch, but because i have injured my hand i can't do it, as i only have one hand to do simple task.

So i just went to the nearby mall to get the really made dough for pastry, unfortunately i couldn't find one. In order not to get disappointed of coming back empty handed, i  bought something else as substitute!  The Frozen Prata!! hehehe.......

Prata, that's what it is called in Singapore while in Malaysia it is called Roti Canai, it's actually the Indian pancake. Crispy pancake that goes well with curry! The main traditional ingredient used in making the Prata pancake is  "GHEE", the fat from lamb. Nowadays people are more health conscious they use margarine to substitute the GHEE.

This recipe is very easy and fast to prepare, even a kid can do it too! I only have one hand to do, if i can do it so can you!

The Famous Cookies - Oreo Cookies! Yes, here is your Oreo Chocolate Chips Cupcakes!

Oreo Chocolate Chips Cupcakes
Oreo Chocolate Chips Cupcakes

Most of us may know the yummy cookies of all time for all ages, the Oreo Cookies! Yes! Here you are, my Oreo cupcakes with the mixed of chocolate chips!

In this recipe, i use the muscovado sugar instead of white sugar. Why??  Well simply because of two reasons......1) muscovado is raw sugar from sugar cane, and it is more natural, 2) white sugar is more sweet, as the Oreo cookies are already sweet so i just want to balance up the level of the sweetness.

This Oreo Cupcakes are all time favorite! Especially if you are holding a party! So, don't hesitate to try my Oreo Chocolate Chips Cupcakes recipe and let me know if you like it! Thanks and happy baking!
